Open Discussion: Halloween

Halloween 2009
Halloween is a fun time for everyone.  You get to dress up and play pretend and just be silly.  I will admit, that I don't do much for Halloween, but my Fall decorations fit just fine for me. :)  However, I do love passing at goodies to the cute little munchkins that come to my door every year.  I even enjoy looking at some of the parents who try to match their outfits to their little tykes.  What I don't like is when the older kids come to my door with or without costumes and stick a pillowcase in my face.  In my opinion, teenagers are too old for trick-or-treating.  However, if in their mind they just are having fun, then dress up and show some manners.  Halloween "protocol" calls for you to have a costume and say trick-or treat.  If you can't do both of these and end the exchange with a thank-you, please don't come to my house.  What are your feelings on Halloween?  Love it? A Beautiful Day!

This past weekend was a GREAT weekend for our family.  Not only was the weather great, but my husband didn't have to work at all.  For those of you are not close to our family, you may be thinking big deal.  But for those of you who do know us, you know that a weekend off for the hubby is a HUGE deal.  So we decided to take advantage of the days off and the beautiful weather to take the girls to Luray Caverns and a nice drive through Skyline Drive. 

When we first arrived at the caverns the girls were both so excited.   The idea of exploring caves underground was coolest thing they'd ever heard of.   Then when we actually started our long decent into the caves, my youngest decided that it may not be so cool after all.  "You mean we are actually going underground!!  For real!"  She whined all the way down that it was too scary and the rocks were going to fall on her head.  But then once she actually got to the bottom of the stairs and looked around, her fears were forgotten.  The two of them set off on their head set tour with the goal to solve the "mysteries" of the caverns.  I love that they provided a separate tour for the kids so they could get excited about learning.  And who doesn't love a good mystery??? 

They discovered the mirror lake, the frozen waterfall, hanging bacon, and even fried eggs.  We even found a formation that looked like a dragon from the movie, "How To Train Your Dragon".   The kids enjoyed listening to the singing rocks and making a wish in the underground wishing well.  After the caverns, we took the long way home so that we could drive Skyline Drive.  It was truly beautiful with all the changing leaves and amazing overlooks.  The kids had fun getting out and exploring and looking for bears.  Although they were disappointed they didn't find any, I was completely fine with it!  What family activities do you enjoy during the Fall?  Grab a latte, put up your feet, and join the discussion!

Open Discussion: Parental Duties

I love being a mom.  It is who I am and what I choose to be.  I love being able to take care of children, teach my children, and above all love my children.   Most moms I have met, feel the same way about their kids.  Although we do not solely identify ourselves as mothers, motherhood is probably the most important role we have right now.  We love and cherish our families, but I for one can admit that I do not enjoy all my parental duties.  As a mom of babies, I didn't mind changing diapers or washing TONS of laundry daily.  As a mother of toddlers, I didn't mind cleaning up accidents or cleaning up an entire plate of dinner off the floor.  As a mother of young girls, I don't mind helping with homework or becoming a chauffeur.  The parenting duty that I just don't enjoy, and haven't since birth, is giving baths.  I know, it is a weird thing to not like, but I just don't.  When they were babies and toddlers, I had to worry about them drowning in the tub and destroyed my back and knees leaning over the tub.  Not such a big deal unless you have a bad back and knee.  As they got older, I had to deal with the whining and crying every time a drop of water got in their eyes or their sister took the toy they were playing with.  At the end of bath time, I was so wet, I needed a bath.  And now that they are older, I have to monitor them so they actually get clean and I somehow always still end of soaking wet.  What parental duty could you live without?  Grab a latte, put up your feet, and join the discussion!

Recipe Corner: Orange Pecan French Toast (allrecipes.com)

I just found this delicious sounding recipe on allrecipes.com.  I've never tried it, but will be making it for my family this weekend.  I usually love any type of French Toast and I doubt this will be any different.  Give it a try and let me know what you think.  ENJOY!


Ingredients

  • 1 cup packed brown sugar
  • 1/3 cup butter, melted
  • 2 tablespoons light corn syrup
  • 1/3 cup chopped pecans
  • 12 (3/4 inch thick) slices French bread
  • 1 teaspoon grated orange zest
  • 1 cup fresh orange juice
  • 1/2 cup 2% milk
  • 3 tablespoons white sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 3 egg whites
  • 2 eggs
  • 1 tablespoon confectioners' sugar for dusting

Directions

  1. In a small bowl, stir together the brown sugar, melted butter, and corn syrup. Pour into a greased 9x13 inch baking dish, and spread evenly. Sprinkle pecans over the sugar mixture. Arrange the bread slices in the bottom of the dish so they are in a snug single layer.
  2. In a medium bowl, whisk together the orange zest, orange juice, milk, sugar, cinnamon, vanilla, egg whites, and eggs. Pour this mixture over the bread, pressing on the bread slices to help absorb the liquid. Cover and refrigerate for at least one hour, or overnight.
  3. Preheat the oven to 350 degrees F (175 degrees C ). Remove the cover from the baking dish, and let stand for 20 minutes at room temperature.
  4. Bake for 35 minutes in the preheated oven, until golden brown. Dust with confectioners' sugar before serving.
