Recipe Corner: Oatmeal Butterscotch Cookie

If you stopped by a few days ago, you may remember that I am trying to choose the cookie that I want to make for our Cookie Exchange.  Oatmeal Butterscotch Cookies are by far my favorite cookie!  But one of my other friends is making a cookie using butterscotch so I'm not sure if my favorite recipe will make the cut.  Remember if you like your cookies a little crisper, cook them a few extra minutes longer.

Ingredients
• 3/4 cup butter, softened
• 3/4 cup white sugar
• 3/4 cup packed brown sugar
• 2 eggs
• 1 teaspoon vanilla extract
• 1 1/4 cups all-purpose flour
• 1 teaspoon baking soda
• 1/2 teaspoon ground cinnamon
• 1/2 teaspoon salt
• 3 cups rolled oats
• 1 2/3 cups butterscotch chips

Directions
1. Preheat oven to 375 degrees F.
2. In a large bowl beat the butter or margarine, white sugar and brown sugar together. Add the eggs and vanilla, beating well.
3. Stir together the flour, baking soda, cinnamon and salt. Gradually add the flour mixture to the butter mixture and stir until blended. Stir in the oats and the butterscotch chips. Drop by teaspoonfuls onto an ungreased cookie sheet lined with parchment paper.
4. Bake for 8 to 10 minutes in the preheated oven, until the edges begin to brown.

You can pretty much add butterscotch to anything and I'll love it! These look wonderful!

Oh yum! Sounds easy enough. I admit that I bought the oatmeal butterscotch refridgerated dough last week b/c I'm super lazy like that.
