Recipe Corner: Yummy Granola Bars

Last week I made some delicious granola bars that were so easy to make, I just had to share.  And although it made a pretty good amount, they were gone in less than 2 days.  My sister-in-law and husband were skeptical at first because of the added coconut, but you can't really taste the it.  It just brings a little extra sweetness to this delicious snack. We are hosting my mom's birthday party here next week and I've already had requests to make them again for the party.  Enjoy!

Ingredients

  • 3 cups quick-cooking oats
  • 1 (14 ounce) can sweetened condensed milk
  • 2 tablespoons butter, melted
  • 1 cup flaked coconut
  • 1 cup miniature semisweet chocolate chips
  • 1/2 cup sweetened dried cranberries

Directions

  1. Preheat oven to 350 degrees F. Grease a 9x13 inch pan.
  2. In a large bowl, mix together the oats, sweetened condensed milk, butter, coconut, chocolate chips and cranberries with your hands until well blended. Press flat into the prepared pan.
  3. Bake for 20 to 25 minutes in the preheated oven, depending on how crunchy you want them. Lightly browned just around the edges will give you moist, chewy bars. Let cool for 5 minutes, cut into squares then let cool completely before serving.

these look and sound yummy...two questions: what happens if you leave the coconut out? and are these chewy or crunchy?

@Alison ~ These are definitely yummy! Very moist, sweet, and chewy. I've never left the coconut out before, but I don't think it would hurt them. :) Enjoy!

Hi Kelly. They sound so good... You could even substitute the condensed milk for a mixture of coconut oil, milk and coconut palm sugar (leaving IN, of course, the chocolate chips) and they would be super duper healthy!! And you wouldn't miss the sugar!

I'm glad you said that about the coconut. I would have thought the same thing she did.
