Fabulous Food Friday with Confessions of a Wannabe Baker

Welcome to Fabulous Food Friday! While exploring the blogosphere, I realized that there were many great recipes to share. So every Friday, I am going to try to feature an awesome blogger with their great recipe!
Today’s feature blogger is Angela from Confessions of a Wannabe Baker. When you get a chance to swing by Angela’s lovely blog, make sure to check out all her fantastic recipes. Today I will be featuring her Oreo Delight. Here’s a little blurb from Angela herself:


I am a busy nanny for the cutest 1 year old twins ever with a love for baking and cooking. I am by no means a professional baker, but I love being in the kitchen and I am always looking to try new recipes. I enjoy making and decorating cakes. I took one cake decorating class at Michael's and the rest is just practice and a little art training in high school. If I could afford it, I would start a business making and decorating cookie cakes. I am still trying to master the art of mailing them then maybe I can start selling them! My blog started out as an easy way to share my recipes with my family, and quickly became something I really enjoy. The only problem with having a baking blog is that I end up eating all the yummies, and that doesn't help my waist line. Which is why I am training for a half marathon. Got to keep the balance. :-D






Here is the yummy Oreo Delight recipe:

I found this recipe on the Make Life Delicious blog. When I was going through my saved recipes I noticed that everything I saved was chocolate and peanut butter, which is one of my favorite combination but I decided to keep looking for something different. This sounded good, and I was able to adapt it so that it was better for my grandfather who has diabetes (after all this was for father's day).

Ingredients
35 - 40 oreos
6 tbsp melted butter
8 oz cream cheese, softened ( I used reduced fat )
1/4 c. sugar
2 tbsp cold milk
12 oz cool whip. thawed ( I used sugar free)
3 1/4 c milk
2 small pkg Jello chocolate instant pudding ( I used sugar free)

Directions
process cookies in food processor until crumbs form. ( I don't have a food processor, so I used a nut chopper, it worked really well... the magic number is 6 cookies)

Oreo Crumbs


As Tim Gunn would say "make it work" so I did



Mix in melted butter and then press into the bottom of a 9 by 13 pan. Refrigerate





Whisk cream cheese, suagr and 2 tbsp milk until blended, fold in 1 1/4 c cool whip.




Spread over crust
Beat pudding and 3 1/4 cup milk with whisk for 2 min. pour over cream cheese layer.
( I added some left over crushed oreos on top)



Let stand in fridge to thicken for 5 mins.
Cover with rest of the cool whip and refrigerate for at least 4 hours. ( I added more crushed oreos on top to make it look pretty)





My family really liked this, and I felt good eating it because it was relatively healthy. It was quoted as being "refreshing.".  This is definitely a new go to for desserts. A great summer treat!

Chris Brogan Challenge : My Mother is On Facebook

As I was sitting in a lonely hotel room, waiting for my husband to get out of work, I was searching the web for new ideas for my blog. During my search, I came across a guy named Chris Brogan, author of Social Media 101 and coauthor of Trust Agents. Mr. Brogan had made a list of 100 blog topics that he hoped “I” would write about. Many of his ideas fit me perfectly, while others I’m not really sure what they are. In all my boredom, I decided to challenge myself to write about all 100 of his topics. This won’t be easy, since some of the topics are a big question mark to me, but a little research never hurt anyone. Figuring in the fact that I don’t write real posts on the weekend, this challenge will be 100% successful if I complete it in 20 weeks. So let’s begin…Day Fifteen – Topic Fifteen(still going)!


This topic doesn’t really work because my mother is not on Facebook. But at my age, I think it would be great if she was. I use Facebook to share little updates and photos with friends in my life. I have nothing to hide from my mother and would welcome her to sign up(you reading mom? ). I have a feeling this blog topic was aimed at younger folks with something to hide!  Is your mother on Facebook? Is this a good or a bad thing? Yummy Giveaway From Country Bob’s

For those of you who follow my blog, you know how much I love cooking and trying out new recipes. When Country Bob’s generously mailed me two bottles of their All-Purpose sauce I couldn’t wait to try it out! Just opening the bottle and smelling the tangy sauce made my mouth water. Country Bob’s All purpose sauce was created by Country Bob Edsen in 1968. His goal was to create the perfect steak sauce, but his perfected recipe is definitely for more than just steak. The first night I used my Country Bob’s All Purpose Sauce, I made hamburgers. Now all of you lovely readers know that my children do not like to eat hamburgers. They usually split one, and getting them to finish it is a long and painful process. When I gave them the Country Bob hamburger, dinner started just like always….crying and whining that they don’t like hamburgers. What was different though, was after their first bite, I didn’t have to coerce them anymore. They ate the entire thing and even asked for more! Here is the recipe I used:
Ingredients

1.5 lbs ground beef
¼ cup Old Fashion Rolled Oats (or breadcrumbs)
¼ cup Country Bob’s All Purpose sauce
Extra sauce for the top
Cheese

Directions

- Preheat Oven or grill (Oven 400 degrees)
- Mix the ground beef, Oatmeal, and Country Bob’s All Purpose Sauce in a large bowl.
- Form meat mixture into 6 patties
- Bake patties on cookies sheet with raised sides (to catch grease) for 20-25 minutes.
- Place patties on bun, cover top with sauce, place cheese on sauce to allow it to melt together

The second time I used my Country Bob’s sauce, the recipe was even easier. But it was just as delicious! Our second meal was shredded chicken smothered with Country Bob’s All Purpose sauce (I can’t wait to try this again with their BBQ sauce!). Here is the simple recipe I used:

Ingredient

1.5 lbs of chicken breasts
1 bottle of Country Bob’s All Purpose Sauce

Directions
- Put chicken into a crock pot and pour an entire bottle of Country Bob’s All Purpose Sauce over it.
- Cook on high heat for 5 hours
- Using two forks, shred meat and stir in sauce
- Cook on low heat for 1-2 more hours
- Serve over a baked potato, as a sandwich, or on a salad.

Don’t worry if my recipes don’t interest you. If you go to Country Bob’s website they have many more to choose from. You can find recipes that not only use their All Purpose Sauce (regular and spicy), but also their BBQ Sauce and Seasoning Salt.

Everyone has their own weakness when it comes to spending money. Whether you spend it on shoes, purses, or going out to eat, it is something that makes you happy and you don’t mind spending the extra money. Unlike many women my age, I’m not really into shopping. When I do go shopping, it is usually for groceries or for my kids. You would think that with my lack of expenses, we would be able to save bundles of dough. However, my weakness is much more expensive than a new pair of shoes. I love family vacations! Family vacations are not only fun, but they are a necessity in my house. My wonderful husband works very hard and rarely takes a day off (including weekends). Family vacations are needed in order to force him to relax and have some fun. Every year, we travel to Disney World for one week and it is the best week of the year. It is a week where we get Daddy’s full attention and don’t have to worry about work calling to distract him from the family fun. Disney World isn’t cheap, but it is worth it for all the great memories and fun times! How do you spend your extra money? Grab a latte, put up your feet, and join the discussion!

Chris Brogan Challenge : Empower Your Best Customers

As I was sitting in a lonely hotel room, waiting for my husband to get out of work, I was searching the web for new ideas for my blog. During my search, I came across a guy named Chris Brogan, author of Social Media 101 and coauthor of Trust Agents. Mr. Brogan had made a list of 100 blog topics that he hoped “I” would write about. Many of his ideas fit me perfectly, while others I’m not really sure what they are. In all my boredom, I decided to challenge myself to write about all 100 of his topics. This won’t be easy, since some of the topics are a big question mark to me, but a little research never hurt anyone. Figuring in the fact that I don’t write real posts on the weekend, this challenge will be 100% successful if I complete it in 20 weeks. So let’s begin…Day Thirteen – Topic Thirteen(trying to keep up)!


This topic obviously doesn’t fit me at all. For those of you who know me, you know I am a stay at home mom, and therefore, no customers to empower (unless you count my kids, you I do live and breathe to serve them). However, if I twist it up a bit, and pretend my blog is business, then maybe I could work on a few things. Every blog has a few completely devoted readers. They are the readers who stop by everyday just to see what you’ve posted. They may or may not comment each day, but you know they read what you wrote. Now that my blog has taken a new direction and I’m hosting giveaways, I think I have a way to help my devoted readers. Recipe Corner: Cinnamon Toast

Do your kids love to cook? Here is an easy recipe that you can let them make themselves. It is a great snack that everyone can enjoy! Ingredients
• 2 slices white bread
• 2 teaspoons butter or margarine
• 2 tablespoons white sugar
• 1 teaspoon ground cinnamon

Directions

1. Use a toaster to toast the bread to desired darkness. Spread butter or margarine onto one side of each slice. In a cup or small bowl, stir together the sugar and cinnamon; sprinkle generously over hot buttered toast.

There are many ways that high schools and colleges could take advantage of using Social Media. I think schools could use Twitter to update or remind students about important events coming up. Imagine a big away game approaching. You definitely want to make sure that you have fans in the crowd. Send out a tweet to the entire student body reminding them of when and where the big game is going to be held. Now imagine a fundraiser, dance, or sporting event happening at the school. Why now send out a tweet with a code that is good for a discount? We all know that we are more likely to buy something if it’s on sale.

I believe Facebook would be good for schools to hold class discussions. If each teacher had a class facebook page, the student could join and be there to help each others with questions, bounce ideas off one another, or just remind someone what the homework is. They could add a discussion section with a question each week that encourages the students to think outside the box and interact with one another. This medium would be good for those that are on the shyer side and don’t feel comfortable speaking up in class. How do you think school could use Social Media? Recipe Corner: Caramel Turtle Brownies

This is one of my favorite desserts! I love brownies, caramels, and pecans…So why not put them together?!? This is definitely one you’ll want to keep! Ingredients

• 1 (14 ounce) package individually wrapped caramels
• 1 (12 fluid ounce) can evaporated milk
• 1 (18.25 ounce) package chocolate cake mix
• 6 tablespoons butter, melted
• 1 ¼ cup semisweet chocolate chips
• 1/4 pound whole pecans

Directions

1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan. Set aside.
2. Unwrap caramels and place in saucepan with 2 Tablespoons evaporated milk. Melt over medium to low heat, stirring constantly.
3. In a large bowl, combine the remaining evaporated milk, dry cake mix, and melted butter. Stir until well blended. Spread half of this mixture in the prepared pan. Bake for 10 minutes.
4. Remove brownies from oven. Sprinkle chocolate chips and drizzle melted caramels over the top. Drop remaining cake mixture by teaspoonfuls over all. Return to oven for 20 minutes. Garnish with whole pecans if you'd like.

Figuring in the fact that I don’t write real posts on the weekend, this challenge will be 100% successful if I complete it in 20 weeks. So let’s begin…Day Eleven – Topic Eleven(still going)!

This is a very open-ended topic because I believe that my children will do many, if not most things, differently when they grow up. If we talk about the technology world, there is no telling what kind of gadgets and gizmos our children will be using when they are our age. Technology changes on a daily basis and it’s hard to keep up. Although cell phones and iPods are commonplace today, we would never have envisioned them growing up. I remember when I was young, the cordless phone was such a fascinating invention. Of course it didn’t hurt that Zac Morris, from Saved By the Bell, had one (a portable one I might add)! Who know what our kids will have. Perhaps video phones in their sun glasses? I also remember growing up and listening to my parent’s record. They always sounded better than the tapes we had, but they weren’t as portable. My kids don’t even know what a record is and I have a feeling my grandkids won’t know what a CD is! It is hard to imagine what they will come up with after iPods and MP3 players, but I’m sure it will be smaller and better. I imagine my kids having a small hidden ear piece that hold over 100G of music. There is no way to tell how technology will change our children’s lives, but if it is anything like Back to Future, I hope I’m around to try a hover board!
