Recipe Corner: Cheesy Ranch Potatoes

I originally found this recipe on allrecipes.com, but it quickly became a family favorite.  If you are looking for a delicious side dish, you should definitely give this recipe a try.  Enjoy!
 

Ingredients
• 4 pounds russet potatoes, cut into 1/4 inch cubes
• 2 teaspoons chili powder
• 1 teaspoon salt
• 1/2 teaspoon ground black pepper
• 6 tablespoons butter, cubed
• 1 (8 ounce) package shredded colby-Monterey Jack cheese blend
• 1 (8 ounce) bottle Ranch dressing

Directions

1. Preheat oven to 400 degrees. Lightly grease a 9x13 inch baking dish.
2. Place the potatoes in the baking dish. Season with chili powder, salt, and pepper. Evenly distribute the butter over the potatoes.
3. Cover dish with aluminum foil, and bake 1 hour in the preheated oven, until potatoes are tender. Remove from oven, and mix in the cheese and Ranch dressing. Continue cooking 10 minutes, or until cheese is melted and bubbly.

M.I.A

I'm not really sure if anyone has noticed (probably not most of you), but I haven't really been giving my blog as much attention as it deserves lately.  At the risk of sounding like a huge complainer, I have not felt very well and my blog has been left to crumble.  Sure I post a recipe here and there, perhaps offer you all a giveaway once  week, but things aren't what they used to be.  I look at the computer with dread because it is just one more thing that I have to deal with.  I want to type, I want to write, but some days I just can't stand the pain that comes with it.  Thankfully, Cheryl has joined Between the Lines and has been taking many of the reviews off my hands so that I can type less.  It has been very difficult for me to step back from the blogosphere, but honestly the headaches from the glaring computer screen and the pain shooting up my arms from typing make it a lot easier.

I would really hate for Between the Lines to fall under water completely, so if there are any aspiring writers out there with interesting stories to tell, recipes to share, or reviews to give, please shoot me an email (betweenthelines-kam at hotmail dot com).   And for those who have been loyally following my blog for the last 2 and a half years, thank you for your support and sorry for going M.I.A.
