Peanut Butter Sandwich Cookies!

I'm a complete and total push-over when it comes to anything chocolate or peanut butter, so bringing the two together just about sends my taste buds into party mode!

I made these cookies to take to the beach last month, and since the days leading up to it were filled with packing and last minute chores, I used a simple Betty Crocker bag mix for peanut butter cookies!  You can make yours from scratch, use a bag mix, use the pre-made dough from the refrigerator section or just buy some in the bakery if you want!

Once you have your peanut butter cookies, melt 1 cup of chocolate chips in the microwave.  I melt mine for 1 minute and then stir until smooth, but if you've got a fancy new microwave with lots of power, your time might be a little less (I'm working with a 16 year old microwave that's losing steam rapidly!).  While they're melting, lay a sheet of wax paper on your counter.

Once it's melted, take a cookie and dip just the one flat side into the chocolate and then lay on the wax paper to harden.  I only dipped half my cookies in the chocolate, but if you want them all dipped, then by all means keep on melting that chocolate and dip away! You can see in the picture that I did try a few with both cookies dipped, but in the end preferred just the hint of chocolate you got with only one dipped!

While the chocolate is hardening, you can make your peanut butter filling:

2 tbsp. softened butter
1/2 cup peanut butter
1 cup powdered sugar
milk as needed

Just mix together and add 1-2 tbsp. milk if needed to get the consistency you want. I just play around with it and add more peanut butter if it's too sweet or more milk if it's too stiff to spread!  Once you have it just like you want it, spread a good chunk on a cookie with chocolate and top with a cookie without!  Push together to flatten the peanut butter and then grab your Diet Coke milk and enjoy!

Are We There Yet????

Despite how much you love you kids, there is only a certain amount of whining a mother can take.  Under normal circumstances, you can leave the room or distract them with another task to keep the whining to a minimum.  However, when you are trapped inside a car for 8 hours, there is no escape!  We will be going on vacation in a few days and I have been desperately trying to think of new ways to keep the girls occupied.  I have the normal books, crayons and paper, DVD's, Music, and even a few car games.   But even that is not enough to keep their attention for an entire 8 hours (without traffic).   So ladies, I'm counting on you and all your creative brilliance to help me out.  What do you do to keep your kids busy on those extremely long car rides?  How do you avoid hearing, "Are we there yet?" repeatedly?    Grab a Latte, Put Up Your Feet, and Join the Discussion!

Build a Dream Playhouse Review and Giveaway

Have you ever noticed that when there is a cardboard box in the room, the imagination of our children grow?  I remember a few Christmases where the box was more exciting than the toy that was in it.  Build a Dream Playhouse.com has taken the idea  of the cardboard box to the next level.  They "believe that imaginative play is absolutely critical to the developing minds of children. That is why they created a line of products centered on creativity and imagination. They supply the blank canvas for children to paint their dreams. Cardboard allows our products to be colored, painted, decorated, and customized to please every child’s dreams. Corrugated cardboard is also extremely durable and safe for children."

My girls browsed through their website for about 30 minutes before they could agree on the perfect playhouse for them.  At first they both wanted the Castle shown above.  And then they wanted the Snack Shack shown below.

But eventually they agreed they wanted to sell ice cream and other sweet treats.  So they were so excited to receive the Imagine Wagon!

Like most kids, my girls go running to the door or window whenever the ice cream truck rolls through our neighborhood.  Unfortunately, their Mommy never buys them anything from the truck because it too expensive (I know...I'm so mean).   So they decided they were going to run their Sweet Shoppe much differently.   They were going to give it away for free!   If only...

My girls had so much fun decorating their Imagine Wagon.  And I was so thankful that it was so easy to put together.   The sturdy cardboard Imagine Wagon has already taken a lot of abuse love.  But it still stands tall for future adventures.  Do you think that your kiddos would love their own Build a Dream Playhouse?  Lucky for you, Build a Dream Playhouse is offering one of you lucky readers a chance to win their choice of playhouses.
